Well of Love

Created by the royal pastry chef for Madame de Pompadour, the famous mistress of King Louis XV, the puits d'amour (well of love) is a traditional French dessert of great refinement. Having become emblematic of the Bordeaux region, it consists of a delicately hollowed-out choux pastry filled with vanilla pastry cream and topped with a thin layer of crisp caramel.
